{"id":1390178,"date":"2024-06-25T18:36:37","date_gmt":"2024-06-25T18:36:37","guid":{"rendered":"https:\/\/diabetesdepot.ca\/?p=1390178"},"modified":"2024-06-25T18:36:40","modified_gmt":"2024-06-25T18:36:40","slug":"recipe-california-quinoa-salad","status":"publish","type":"post","link":"https:\/\/diabetesdepot.ca\/index.php\/2024\/06\/25\/recipe-california-quinoa-salad\/","title":{"rendered":"Recipe: California Quinoa Salad","gt_translate_keys":[{"key":"rendered","format":"text"}]},"content":{"rendered":"\n<p><em>*Adapted from Yum &amp; Yummer Cookbook<br>Makes 6 cups<\/em><\/p>\n\n\n\n<h2 class=\"wp-block-heading has-medium-font-size\" id=\"h-salad\"><strong>Salad:<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cup uncooked quinoa, rinsed<\/li>\n\n\n\n<li>1 \u00be cup water<\/li>\n\n\n\n<li>1 cup diced mango<\/li>\n\n\n\n<li>\u00be cup frozen shelled edamame beans, thawed<\/li>\n\n\n\n<li>\u00be cup diced red bell pepper<\/li>\n\n\n\n<li>\u00bd cup sliced almonds<\/li>\n\n\n\n<li>1\/3 cup raisins (omit if you\u2019d like)<\/li>\n\n\n\n<li>1\/3 cup finely miced red onion<\/li>\n\n\n\n<li>1\/3 cup unsweetened flaked coconut<\/li>\n\n\n\n<li>3 tbsp minced fresh cilantro<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading has-medium-font-size\" id=\"h-dressing\">Dressing:<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 tbsp olive oil<\/li>\n\n\n\n<li>2 tbsp freshly squeezed lime juice<\/li>\n\n\n\n<li>1 tbsp balsamic vinegar (white or regular)<\/li>\n\n\n\n<li>2 tsp liquid honey<\/li>\n\n\n\n<li>Sea salt and ground pepper to taste<\/li>\n<\/ul>\n\n\n\n<p>In a medium pot, combine quinoa and water. Bring to a boil over high heat. Reduce heat to low, cover and simmer for 12-15 minutes, or until quinoa is tender and water has been absorbed. Remove from heat and let stand, covered, for 10 minutes. Cool completely.<\/p>\n\n\n\n<p>In a large bowl, stir together cooled quinoa, mangos, edamame, bell peppers, almonds, raisins, onions, coconut and cilantro. Set aside.<\/p>\n\n\n\n<p>In a small bowl, whisk together olive oil, lime juice, vinegar and honey. Pour over salad and mix well. Add salt and pepper to taste and mix again.
